This is a delicious hearty meal despite there not being any startchy noodles involved – perfect for those wanting to get more vegetables into their diet or want a different gluten-free alternative. Plus the Alfredo sauce is super creamy and dreamy!

The great thing is that nowadays you can find pre-spiralized vegetable noodles, so if you don’t have a spiralizer, no problem! I think any spiralized vegetable noodles would be great in this, so play around with your favourites.
