I love lentils so much! They are a great source of plant-based protein, super high in fibre and good source of iron. And they keep you full of slow-burning energy due to their complex carbs and fibre content.
This is definitely an easy recipe to whip up, especially if you use a can of lentils instead of cooking from dried form.
