I first enjoyed a soup like this at a small family owned Thai restaurant in Kelowna, BC. Since moving away 6 years ago, I still often find myself craving that cozy flavourful soup packed full of crunchy veggies.

 

After countless times trying to recreate that soup, I have finally come up with a recipe that hits the mark!

With flavours of curry and lemongrass, creamy coconut and all the veg, you cannot go wrong diving into a giant bowl of this soup!
