You know when you have something super delicious at a restaurant and then leave, craving it for days?
Well this recipe was inspired by a Kale salad from a local restaurant called Sprout and also from a killer kale Caesar I enjoyed at a restaurant called Kootenay Soulfood. I have been craving that Caesar dressing ever since I ate it, and came up with a recipe that tastes similar! The addition of roasted beets and butternut squash to a Caesar style salad, definitely steps it up a notch!
