This coconut chocolate chia pudding is such an easy recipe that is great for when you want a healthier treat or even to serve for dessert after a dinner party! The consistency is super creamy and thick, think: chocolate mousse! Full of healthy fats (omega-3) and fibre, plus iron, magnesium and protein, and naturally free of gluten and dairy, this is a perfect “treat” for anyone.

I want to stress the importance of using a high quality can of full-fat coconut milk for this recipe. That is really what makes this “pudding” extra creamy and thick. When looking for a higher quality of coconut milk, look at the ingredients and ensure that they only contain coconut, perhaps some water and maybe guar gum. Any other ingredients, search for a different brand.
For this recipe it is imperative that you use a full-fat version of coconut milk. They are usually automatically full-fat unless stated on the can as “light”.My favourite type is this:
I also think it makes a difference which type of chocolate powder you use. CacAO powder, is chocolate in its purest rawest form. You usually have to head to your local health food store or Whole Foods to find this type. Regular cocOA powder can be found in the baking section at the grocery store. This type of chocolate has been heated to high temperatures and usually contains another ingredient like sodium carbonate. Some say that this type of chocolate powder may not contain as many antioxidants and living enzymes and, overall, has less nutritional value as the raw cacAO powder. Raw cacao powder actually has some great national benefits as it contains magnesium, iron, potassium, dietary fibre and even protein.
I find raw cacao powder tastes better too. If you don’t have raw cacao powder on hand, regular baking cocoa powder will still do the trick in a pinch. Here’s the kind I like to use:
