This is one of those pasta dishes I could eat once a week on repeat!
Creamy with beautiful acidity from fresh tomatoes makes for a super satisfying pasta that's not too rich. And of course it wouldn't be a recipe by me if I didn't add in veggies, hellooooo heaps of vitamin rich spinach!
This is a great recipe for those who want to impress dinner guests that is friendly for all (think: gluten-free, dairy-free, egg-free, soy-free!)
